Cheeseburger Soup
Makes 8 servings
|
½ pound ground beef
¼ cup all-purpose flour
4 tablespoons butter or margarine, divided
2 cups (8 oz) cubed Velveeta cheese
¾ cup chopped onion
1 can (12 fluid oz) evaporated
milk
¾ cup shredded carrots
¾ teaspoon
salt
1 teaspoon dried basil
¼ to ½ teaspoon
black pepper
2 cans (14.5 fluid oz cans) chicken broth
4 cups peeled and diced potatoes (I substitute 2 cups refrigerator hash
browned potatoes)
Cook ground beef in large saucepan over medium heat
until brown; drain. Melt 1 tablespoon butter in same
saucepan over medium heat. Add onion, carrots, celery and basil; cook,
stirring occasionally,
about 10 minutes or until tender. Add broth, potatoes and cooked beef;
bring to a boil. Reduce to low and cover.
Cook, stirring occasionally, 10-12 minutes or until potatoes are tender.
Melt remaining butter in a small saucepan
over medium heat. Add flour; cook, stirring constantly for
5 minutes or until bubbly. Add to soup; bring to boil. Cook, stirring
occasionally for 2 minutes.
Reduce heat to low; add cheese, milk, salt and pepper. Stir until cheese is
melted.

Tuscan-Style Sausage and White
Bean Soup
Makes 8 servings
|
¼ cup butter or margarine
½ cup chopped onion
2 garlic cloves, finely chopped
¼ cup all-purpose flour
1 can (12 oz) evaporated milk
1 can (14.5 oz) chicken broth
½ to 1 pound mild Italian sausage
1 can (15.5 oz) cannellini (white kidney beans), un-drained
salt
ground pepper
Cook sausage in large saucepan over medium heat until
browned; drain and set aside.
Melt butter in same saucepan over medium
heat. Add onion and garlic; cook, stirring
occasionally, 1 to 2 minutes
or until onion is tender. Stir in flour. Gradually stir in evaporated
milk
and chicken broth. Cook stirring constantly, until mixture comes to
a boil. Add sausage and beans.
Heat through. Season to taste with salt
and pepper.

Beer Bread
Makes 1 loaf |
3 cups self rising flour
½ cup sugar
1 can or bottle of your choice of beer
3 tablespoons
Preheat oven to 350 degrees.
Combine flour, sugar,
and beer; mix.
Pour into greased loaf pan.
Melt butter and pour over mixture.
Bake 50-55 minutes until golden.
